Chocolate Chip Cheese Bars

1 tube (30 oz.) refrigerated cookie dough
1 (8 oz.) package cream cheese, softened
1/2 c granulated sugar
1 egg
1/2 teaspoon Kosher salt
Directions
- Preheat oven to 350 degrees
- Cut half of the cookie dough tube into slices and add to the bottom of a lined 9 in. x 9 in. baking dish. Using your hands, form a smooth and level base of cookie dough (see note).
- Beat cream cheese, sugar, egg, and salt together until smooth. Pour and smooth over cookie dough base with a rubber spatula.
- Crumble remaining cookie dough in ~1 in. pieces over the top of the mixture.
- Bake for 30 – 35 minutes, or until a toothpick inserted in the middle comes out clean. Cool on a wire rack, then slice.
Notes
- Use an extra sheet of parchment paper under your hands while smoothing out the cookie dough base. This will keep your hands from getting sticky during this step.
- Bars can be refrigerated in an airtight container for up to three days.
