And no, before you picture wiggly slices of gelatin on a plate, this isn’t that kind of Jell-O situation. We’re talking about the powdered mix baked right into the cake batter, giving you that bright strawberry flavor without any gelatin texture. Just pure, fluffy, fruity goodness.
I first made this cake when I was trying to use up a box of strawberry Jell-O that had been lurking in my pantry for longer than I’d like to admit. Luckily, Nanny had this perfect recipe waiting for me in her handwritten cookbook.
What I love most about this recipe is how easy it is. No complicated steps, no hours in the kitchen. With just a few ingredients, one mixing bowl, and a plan to share (or not share) the finished product. It’s the kind of cake that works for birthdays, potlucks, or when you just need a little “pink pick-me-up.”
And because the Jell-O mix blends right into the batter, there’s no jiggly layer. You’re going to get a moist, fluffy strawberry cake through and through. It’s sweet without being over the top, and you can take it up a notch with cream cheese frosting, whipped cream, or even a drizzle of chocolate if you’re feeling fancy.
Trust me: once you bake this, you’ll start “accidentally” keeping Jell-O mix on hand. Just in case.
Strawberry Jell-O Cake

1 package white cake mix
1 – 3 oz. package strawberry Jell-O
1 cup water
1/2 cup oil
1 t vanilla extract
3 eggs
1 cup fresh straberries, sliced
- Ingredients for Glaze
2 c powdered sugar
1 c unsalted butter, melted
2 – 3 T milk, for thinning
Directions
- Preheat oven to 350 degrees. Grease a 9″ x 13″ baking dish.
- Combine cake mix and Jell-O packet in a large mixing bowl. Add water, oil, and vanilla. Mix well using a whisk or hand mixer.
- Add eggs one at a time, mixing well after adding each egg.
- Fold in 1/2 of the sliced fresh strawberries.
- Bake cake for 30 – 35 mintues, or until a toothpick inserted in the center of the cakes comes out clear.
- Prepare the glaze. Mix melted butter and powdered sugar. Add a tablespoon of milk at a time until you’ve reached the desired consistency.
- Pour glaze over cake when the cake is still warm. Do not pour the glaze over the cake while it is still hot.
