Your New Favorite Summertime Treat
I found this recipe in an old Taste of Home cookbook, and I’ve been hooked ever since. The light and fluffy texture is a perfect treat for summer. Since starting this blog, I’ve had to start inviting my people over to test all of these recipes! I’ve dubbed this new tradition “Sample Saturday.” My guests loved the light texture of this simple cheesecake after our heavy meal. This is a perfect treat to prep on a weekend to ensure you have somethin’ sweet after dinner.

When I say this recipe is easy, I mean ridiculously easy. This is the perfect recipe to bake the night before or morning of, and chill in the fridge until you’re ready to go. Not a fan of blueberries? Simply switch up the pie filling.
You mix, pour, swirl, and bake! Yes, that’s it. Maybe using the store-bought crust is considered cutting corners, but I don’t care! I live for a simple dessert recipe. If you’re a fan of this site, you probably do too.

- Eggs
- 2 blocks of Cream Cheese
- Sugar
- Vanilla Extract
- Blueberry Pie Filling
- 9″ Pie Crust




BLUEBERRY SWIRL CHEESECAKE

A no-fuss cheesecake with light texture, and the perfect amount of sweetness!
Ingredients
2 blocks Cream Cheese, softened
2 Eggs
1/4 c Sugar
1 T Vanilla Extract
9″ Pie Crust
1 21 oz. can Blueberry Pie Filling
Directions
- Preheat oven to 350 degrees Fahrenheit
- Using a hand mixer in a medium mixing bowl, beat cream cheese, eggs, sugar, and vanilla extract until smooth.
- Pour mixture into pie crust.
- Drop 6 – 7 tablespoons on top of the mixture in different areas.
- Slowly drag a butter knife or toothpick through the pie filling to create the swirl effect. Don’t fully mix, or you will not see the swirl effect.
- Bake for 35 – 40 minutes, or until the center is set. If you give it a slight jiggle, the mixture shouldn’t move. Chill at least 2 hours.
- Cover the cheesecake with the rest of the pie filling.
