This quick and budget-friendly recipe has earned a permanent spot on my site (thanks to my husband’s insistence). Your favorite sub shops would have been out of business years ago if these flavors didn’t work well together. It’s packed with your favorite Italian sub’s bold, crave-worthy flavors- without the hefty price tag. Make it for lunch or dinner. You can skip the buns and go big with a low-carb salad for two.

Shopping List

  • Fresh garlic
  • Ham & turkey sub kit
  • Hard salami
  • Provolone cheese
  • Mayonnaise (Duke’s, of course!)
  • Large head of romaine lettuce
  • Red onion
  • Red wine vinegar
  • Kosher salt and pepper
  • Olive oil, preferably one marked for dressings & sauces
  • 8″ Sub rolls (bakery-fresh- we grab a pack of 6 for under $3)
  • Jar of pepperoncini peppers

Pro Tips for Perfect Subs

  • If you like a warm sub, melt the cheese on the sub roll in the oven. Add the cold ingredients after removing the sub from the oven.
  • Let the garlic sit in the olive oil and vinegar to flavor the oil and lessen the punch of raw garlic. This makes sure you have the fresh garlic flavor throughout the entire mixture. You can use garlic powder, but it will not be quite as flavorful. Work with what you’ve got!

Ingredients

  • 2 8″ Sub Rolls

  • 4 slices Provolone cheese

  • 1/4 c red onion, diced

  • 1 t Kosher salt

  • 1/2 T Italian seasoning

  • 1/2 c Romaine lettuce

  • Dressing
  • 3 Garlic cloves

  • 2 T Olive Oil

  • 2 T Red Wine Vinegar

  • 1/4 c Mayonnaise

  • 1/4 c Hard Salami

  • 1/2 c Ham

  • 1/2 c Turkey

  • 4 Pepperoncini peppers, chopped

Directions

  • In a medium mixing bowl, combine vinegar, olive oil, and garlic. Set aside for at least 15 minutes.
  • Add mayonnaise to mixture.
  • Use a serrated knife to open the sub rolls. Add two pieces of cheese to each roll.
  • In a medium mixing bowl, combine all other ingredients.
  • Add the mixture from step one into the medium mixing bowl. Combine well.
  • Add half of the mixture to each sub roll and enjoy!

Notes

  • Use what you have on hand! I hope this gives you some inspiration for an easy meal.
