This is for the nights when you know a biscuit would be absolute perfection with your dish, but you have no time (or counter space) to make classic homemade biscuits. These easy Southern biscuits were a staple in my Nana’s kitchen. They are a hit to serve with breakfast, lunch, and dinner.

How the heck does this work?
You may be asking yourself, “How is this possible?” Answer: chemistry!
Self-rising flour contains baking powder and salt. When combined with moisture and heat, it produces carbon dioxide gas, which causes the dough to rise and creates a light and airy texture in the biscuits.
Milk gives moisture and activates the baking powder in the self-rising flour. The proteins found in milk help to give structure as they bake. You do not want to be known as the person who brings the dreaded dry biscuits to the party!
The mayonnaise may sound unconventional, but it provides fat and moisture. This makes the biscuits taste tender and rich. Mayo is also made of oil and eggs, which help bind the batter.
TIPS:
- Be careful not to overmix your batter. You want to mix just enough to see that the flour has been dissolved. Overmixing will result in a tough biscuit.
- Add extra seasonings, cheeses, or herbs to your batter to match the vibe of your meal!

Ingredients
3 cups self-rising flour
1/3 cup mayonnaise
1 1/2 cups milk
Optional: 1 T melted butter to brush on once baked
Directions
- Preheat oven to 350 degrees Fahrenheit
- Mix all ingredients in bowl until flour is dissolved.
- Pour batter into greased muffin pans. Fill each cup about 3/4 full.
- Bake 10 – 15 minutes, or until golden brown.
Notes
- Don’t overmix the batter.
- Brush finished biscuit muffins with melted butter for added flavor.
