Sausage and Lemon Orzo

1 lb. Hot or mild Italian sausage
1 small yellow onion, chopped
4 cloves of garlic
1 cup orzo
Juice of one lemon
1/2 t red pepper flakes, more if you prefer more spice
4 cups chicken broth
1/2 cup parmesan, freshly grated, more for garnish
1 cup heavy whipping cream
2 cups spinach, chopped
Salt & Pepper to taste
Directions
- In a large pot, add sausage and onion. Cook until sausage is fully cooked.
- Add orzo, garlic, pepper flakes, and half of the lemon juice. Continue to cook for 30 seconds, stirring to coat the orzo
- Stir in the chicken broth. Once the pot is bubbling, lower the pot to a medium-high heat. You don’t want this to be a full-on boil. Cook for 10 more minutes. Be sure to stir every few minutes so the orzo doesn’t stick to the bottom of the pot. Add heavy whipping cream and stir when there’s about a minute left on your timer. Again, you do not need to be on high heat for this!
- Remove from heat. Add cheese and spinach. Stir into the pot until the cheese is melted and the spinach is wilted. Add the rest of the lemon juice to your liking. I use it all because my husband LOVES it.
