A Hug in a Bowl
We miss our “Foxxy-lady” Cathy so much. She left us entirely too soon, but her memory and warmth live on through her recipes, especially this Broccoli and Cheese Casserole. We would give anything to have her back, even to hear her belly-laugh just one more time. Her daughters and I often make her casserole to remember her on her birthday. Everyone loved this cheesy, comforting recipe that she shared at every occasion. I hope it will become a treasured favorite in your family, too.
Why You’ll Love This Recipe
- Cheesy & Affordable: This dish is also a go-to when frozen broccoli and a jar of cheese are needed to rescue otherwise bland pantry staples.
- Kid-Friendly: Even picky eaters can’t resist broccoli coated in a sea of cheesy goodness-my daughter devours it every time!
- Versatile: Use up any veggies on their last leg and reduce food waste in a delicious way.
TIPS
- Boost It with Protein: Add leftover chicken or sliced Cajun smoked sausage for a hearty twist.
- Patience Pays Off: If you can! Letting this dish rest for about 10 – 15 minutes after baking helps give structure to the casserole.
