The Joy of Christmas Morning

Every Christmas, the excitement fills the air. Wrapping paper strewn across the floor, sounds of the children laughing, and the joy of new treasures being unwrapped- it’s a magical moment! I want to be present (get it?) for it all. Thanks to this casserole, I can soak it all in while breakfast takes care of itself.

Why This Recipe Works

This dish is full of breakfast classics: sausage, eggs, cheese, and croutons that mimic buttery toast. Whip it up the night before, and pop it in the oven on Christmas morning. It’s also versatile enough for a church potluck, a busy Saturday, or whenever you need a comforting breakfast for guests.

TIPS:

  • Use Freshly Grated Cheese: I’m begging you to use freshly grated cheese. It adds so much more flavor than the pre-shredded cheese you buy in the bag. If you buy the big block, save the rest for other recipes for the week.
  • Mix Sausage Flavors: It doesn’t seem to overpower those who aren’t the biggest fans of spice.
  • Pick the Right Croutons: Go for larger croutons that buttery toast feel. Smaller ones might soak up too much liquid and become soggy.
  • Picky Eater Hack: Finely chop the mushrooms. They’ll blend into the casserole unnoticed (my mushroom-hating brother never caught on!).

Ingredients

  • 2 1/2 cups seasoned croutons

  • 1 or 2 pounds sausage, hot or mild

  • 6 eggs, beaten

  • 2 1/2 cups milk

  • 1- 4 oz. can sliced mushrooms, drained (optional)

  • 1- 10.5 oz can cream of mushroom soup

  • 2 cups grated cheddar cheese

  • 1 T Dijon mustard

Directions

  • Put croutons in 9×13-inch greased casserole dish or pan.
  • Cook and drain sausage; spread over the croutons.
  • Mix eggs, milk, mushrooms, and cream of mushroom soup. Pour over sausage.
  • Sprinkle the grated cheddar over the top of the mixture.
  • Cover and refrigerate overnight.
  • Bake uncovered for one hour at 350 degrees.
