This dressing has had my husband craving salads, fries, sandwiches, and anything else you may want to drown in a dressing that is bright and bursting with fresh flavor. This dressing came about from attempting to make my own dressing version of the lemon garlic aioli that is served at one of our favorite local restaurants, the Sweet Onion. I was having a crazy craving for their chicken parmesan sandwich. The lemon aioli brought an addictive lightness to a typically heavy sandwich. I knew I had to try to recreate that feeling at home.
This dressing has been a must-have in our refrigerator. As I mentioned, this has been poured over almost everything we eat. It goes great on top of a grilled chicken salad, drizzled over roasted Greek potatoes, a change-up from ranch for dipping veggies, you name it. The worst part? My dressing “for the week” mysteriously doesn’t seem to last longer than one meal. But, that’s perfectly fine, because you can quickly make it all again with a food processor or blender!
Jump to RecipeLet’s talk about another important factor of the base of this dressing. I am a Duke’s mayonnaise loyalist! I’m convinced there is a major difference in taste when I try any other brand (just for testing purposes, I swear) when used as a base. This may be from being born and raised in the South, but we grew up with the motto, “If it ain’t Duke’s, it ain’t mayonnaise!”
This dressing combines the perfect amount of salty parmesan cheese, bold parsley, garlic, and fresh lemon. You can’t go wrong with these flavors. If you are able, try to buy the fresh ingredients. Buying these items off the shelf, like the bottled lemon juice, may not destroy the recipe, but you definitely will be missing out on the fresh explosion of the truly fresh ingredients listed.
The fact that I can throw all of the ingredients in my food processor and have it on top of a salad in minutes makes this my go-to dressing for a spur-of-the-moment dinner.
