Cole’s Quick & Easy Corn Dip

I have officially named this easy and addictive dip after my little brother, Cole. Seriously, this is a true ten-minute dip. Keep reading if you want to join me on memory lane. At this point, I add the budget-friendly ingredients to my cart when he tells us he’s coming home because I know he will be expecting this flavor-packed dip to snack on all weekend. He’s been spotted enjoying the creamy and tangy taste on tortilla chips, tacos, and even eggs. There’s no excuse not to have it ready for him because it’s ridiculously easy to whip up! You may already have the ingredients in your pantry.

I love making this ten-minute appetizer dip for a party or to have for an extra topping on taco night. It has yet to meet a hater-unless you’re on Team “No Cilantro.” This is also a great way to use forgotten veggies hanging out in the fridge, like bell peppers or jalapeños.

Shopping List for Cole’s Corn Dip

  • Ranch dressing mix
  • 2 cans whole kernel corn
  • 1 can black beans
  • 2 limes
  • Garlic powder
  • Onion powder
  • 1 bunch cilantro

Cole was the classic kid brother yelling, “I’m not touching you!” while standing .00001 millimeters from my face. He rode shotgun in my VW Beetle every morning on the way to school, listening to all the CDs our parents hated. He could be my biggest annoyance—but always my biggest supporter.

Voted “Best All Around” while I claimed “Most Likely to Rule the World”, he’s a goofball in the best way. My kiddos (and his sweetest boy!) are obsessed with him, and honestly, who wouldn’t be? He’s smart, charming, and decent at golf—though I might not give him too much credit for that.

Who knew I’d one day be so honored to call this guy my brother? They truly don’t make ‘em any better. And if being my lifelong quality assurance tester for every recipe experiment in my kitchen earns him extra brownie points—so be it.

Cole’s Corn Dip

Ingredients

  • 2 cans whole kernel corn, drained

  • 1 can black beans, drained and rinsed

  • 1 bunch cilantro, roughly chopped, save some for garnish

  • 1 bunch green onions, chopped, see note

  • 1 packet ranch dressing mix

  • 2 T garlic powder

  • Juice of one lime

  • 1c mayonnaise

  • Salt to taste

Directions

  • Empty all canned items into the colander to rinse and drain. Gently shake any excess water.
  • In a medium mixing bowl, combine all ingredients.
  • Adjust flavors to your liking. You may want to add more lemon juice for a tangier dip, or more ranch mix for more of a heartier flavor.
  • Enjoy!

Notes

  • I like to mix the whites of the green onions into the dip and garnish the dip with the green parts for a pop of color.
